    The Gironde District of France, in the South West, is the main centre of the French Sturgeon fishing and it is on the rivers and streams in that area that the fishing boats are most active. Nylon nets, about 300 feet long, are put into the water loaded with weights and floats. As the Sturgeon swim against the currents these ground nets slowly envelope them.

    The female is most sought after because it is from the roe that caviar is made. The average yield from the female Sturgeon is about 30-40 lbs. When the fishermen make a catch they haul the fish into the boat, pass a line through the snout and out the gills and trail it in the water until they return to port.

    Once ashore the fish is longitudely all open, after bleeding an artery near the tail, and the roe extracted. Caviar is prepared by beating the ovaries and straining them through a sieve to clear the eggs of the membranes, fibres and fatty matter. The resultant matter is then soaked in a weak salt solution and slowly dried. Usually it is stored in air-tight tins until required or for transporting to consumers.

    Caviar has been a table delicacy in Europe since the 16th. Century. It is eaten either as an hors d'oeuvre, with liqueurs, or as a savoury, or as a flavouring to other dishes. A coarse kind of caviar was until recently a staple article of food in parts of Russia and Eastern Europe.
