    FOR THOSE ON THE WAY TO SERVICE, WHEN THE DAILY FAST ENDS THERE IS A SNACK WAITING FOR THEM IN THE SQUARE OF THE CASBAH WHERE STREET SELLERS WITH CHARCOAL FIRES AND ALCOHOL BURNERS DO A BRISK TRADE IN GRILLED MEAT, SWEETMEATS AND BARIC, A FRIED PASTRY FILLED WITH EGG AND SPICES.

PREPARATIONS OFTEN BEGIN IN THE AFTERNOON WHEN CHORBA, A SPICY RICH SOUP, IS PUT ON A WOOD FIRE TO SIMMER WHILE THE WOMEN OF THE HOUSEHOLD SIT ON THE FLOOR, ROLLING WITH THEIR HANDS THE TRADITIONAL WHEAT AND OIL DISH OF COUSCOUS TILL IT IS READY FOR FRYING. AS USUAL, THE FAMILY EAT THEIR EVENING MEAL SITTING ON THE GROUND AROUND THE COMMUNAL DISH. THE PERIOD OF FASTING LASTS 30 DAYS, THE END OF WHICH IS MARKED BY THE FEAST OF RAMADAN.
