    THE BIGGEST REVOLUTION IN MILK PROCESSING SINCE PASTEURISATION IS CLAIMED TO HAVE BEEN PERFECTED BY THREE TEAMS OF BRITISH SCIENTISTS. BY THE PROCESS, ON WHICH THE DEVELOPERS - THE EXPRESS DAIRY COMPANY - BEGAN RESEARCH IN 1956, MILK CAN BE KEPT FR SIX MONTHS UNREFRIGERATED AND IN ANY CLIMATE. REFRIGERATED, IT WILL KEEP FOR EVER.

    THE CONSEQUENCES ARE THOUGHT TO BE SO IMPORTANT FOR BRITAIN'S FARMERS AND DAIRY EXPORTS THAT MR. GEORGE BROWN, BRITISH MINISTER FOR ECONOMIC PLANNING, HAD SECRET TALKS WITH THE DEVELOPERS LAST WEEK, AND MR. PEART, MINISTER OF AGRICULTURE, WAS CALLED IN FOR MORE TALKS YESTERDAY.

    THIS LONG-KEEPING MILK COSTS NO MORE THAN NORMALLY PROCESSED MILK. IT TASTES THE SAME, AND A VERY LARGE QUANTITY IS REPORTED TO HAVE BEEN "SOLD QUIETLY" BY MILK ROUNDSMEN IN LONDON.

    THE PROCESS, KNOWN AS 'ULTRA-HIGH TEMPERATURE STERILIZATION,' HAS BEEN PERFECTED BY SCIENTISTS OF THE EXPRESS DAIRY, THE MINISTRY OF AGRICULTURE, AND THE NATIONAL INSTITUTE OF DAIRY RESEARCH.

    THE MILK IS HEATED TO A TEMPERATURE SLIGHTLY ABOVE 100 DEGREES CENTIGRADE AND HELD AT THIS FOR LESS THAN TWO SECONDS. THE DIFFICULTY IS IN GETTING BOTH THESE FACTORS EXACTLY RIGHT, AND ESPECIALLY IN COOLING THE MILK INSTANTLY AFTER THE STERILIZATION.

    IN A SECRET TEST PROGRAMME TO PAVE THE WAY FOR EXPORTS OF IT, SCIENTISTS IN 22 COUNTRIES HAVE KEPT SAMPLES FOR SIX MONTHS AND LONGER. ALL HAVE REPORTED THAT THE MILK SURVIVED PERFECTLY, AND THAT EVERTING CLAIMED FOR IT APPEARS TO HAVE BEEN SUBSTANTIATED.

    THE COMPANY IS CALLING THE NEW MILK "DAIRY FRESH". IT HAS ALREADY SET UP A SUBSIDIARY EXPORT COMPANY TO DEAL WITH ORDERS FROM OVERSEAS WHICH INCLUDE AN OIL COMPANY FOR ITS TANKER FLEET AND INQUIRIES FROM PERSIA AND AUSTRALIA.

    THE CHAIRMAN OF THE EXPRESS DAIRY, MR. W.E.D. BELL, SAID: "VAST UNIMAGINABLE POSSIBILITIES HAVE BEEN OPENED UP, BRITAIN CAN NOW SEND MILK ANYWHERE. AT LAST, WE CAN FEED MILK TO THE TWO-THIRDS OF THE WORLD THAT IS STARVING".
