    THE IDEA TO PRODUCE NUOC MAM CAME FROM THE FRANCO - VIETNAMESE COMMUNITY IN ABIDJAN AND RESULTING FROM THIS PRODUCING COMPANY, FINUMA, WAS FORMED. MOST OF THE CAPITAL OF 140-THOUSAND U.S DOLLARS WAS PUT UP BY LOCAL BUSINESSMEN.

    THE FACTORY, WHICH IS IN THE ABIDJAN SUBURBS, WAS OPENED LAST THURSDAY BY THE PRESIDENT OF THE NATIONAL ASSEMBLY, PHILIP YACE. THE INAUGURATION SPEECH WAS GIVEN BY THE VICE-PRESIDENT OF THE IVORY COAST ECONOMIC AND SOCIAL COUNCIL, HIPPOLYTE AYE. THE MINISTER OF PLANNING, MOHAMED DIAWARA, ALSO SPOKE.

    THE FACTORY WILL INITIALLY PRODUCE 400-THOUSAND LITRES OF FISH SAUCE A YEAR, RISING TO 1.2 MILLION LITRES. FISH IS STORED WITH SEA SALT IN VATS FOR FIVE DAYS. AFTER FERMENTATION, THE RESIDUE IS KEPT FOR TWO MONTHS, DURING WHICH TIME IT TURNS INTO LIQUID. THEN SYRUP IS ADDED, FOLLOWED BY FILTERING. THE RESULT IS A CLEAR OIL WHICH IS READY FOR BOTTLING.
