    Chinese food is considered a gourmets delight in the western world. Many items which are a simple part of everyday Chinese cooking area a rare delicacy in the west. One such expensive luxury is the Chinese cabbage.

    SYNOPSIS: In restaurants from New York to Rome, western customers may pay a very high price for the privilege of eating a few pieces of cabbage leaf. here in a Peking street market, they're commonplace, as the main winter vegetable.

    Winter started on November the ninth on the Chinese calender and already the market stalls are piled high with these cabbages, a part of the staple diet in the north. The demand for them is high.

    It is the custom for people to lay in large stocks of cabbages to last through the winter until spring. The cabbages are graded into first, second and third class quality with the best costing about 24 fen a kilogramme, that's about two US cents.

    The cabbages are cheapest at the beginning of November and families can buy the third class vegetable in unlimited quantities. These are then stored - in storage pits dug in the courtyards of houses or piled in corridors and on roofs of apartment blocks. Dried they're a delicious part of the family meal in North China throughout the winter months.
