    THE DINNER WAS SPONSORED BY THE ITALIAN ACADEMY OF CUISINE. THE TWENTY- THREE DISHES WERE PREPARED FROM RECIPES OF APICIUS, A GOURMET OF EMPEROR TIBERIUS'S REIGN IN THE FIRST CENTURY A.D.

    EACH DISH BROUGHT TO THE TABLE BORE AN INSCRIPTION, IN LATIN, INDICATING THE PARTICULAR COURSE. THE VARIOUS COOKS BROUGHT IN THE DISHES PERSONALLY, AFTER HAVING FOLLOWED FAITHFULLY THE ANCIENT RECIPES.

    GAME, FISH AND OTHER SEA FOODS, PORK, MUTTON, BEEF AND CHICKEN, WERE THE BASIS OF MANY DISHES.ALL WERE GARNISHED LAVISHLY. GUESTS HAD AN OPPORTUNITY TO VIEW THE FOOD BEFORE IT WAS SERVED. THEN THE MEAL BEGAN. ALTHOUGH THE GUESTS WERE NOT EXPECTED TO RECLINE DURING THE MEAL, THE FOOD WAS SERVED ON ROMAN-STYLE PLATTER.
