    In British North Borneo - where people live a leisurely tropical life in evergreen surroundings and continue their agricultural economy with traditional buffaloes and wooden ploughs, and where women work alongside men in growing paddy - the people have perfected a technique of making wine...a rice wine called "Taapi".

    In traditional wooden rice mills, the paddy is husked to rice and fried slowly over wood fires, When the rice is properly cooked, it is turned over on a bamboo mat and powdered yeast is added. Then the mixture is stuffed into an earthen jar and allowed to ferment.

    Almost every family makes its own wine; and every occasion for celebration (for example, a grandfather celebrating the 30th day of his grandson's birth) calls for wine.

    And the pretty Kadazan girls in their silver-studded costume join in, too, drawing the wine from a jar with a bamboo pipe. The white wine is somewhat thick, but highly popular not only in Borneo but in surrounding countries.
